Snickerdoodles (GF/DF)

I never thought I would say this, but once in a while I would like to have an alternative to Chocolate Chip Cookies.  I know that it’s heresy, but there it is.  Here’s our adapted recipe for Snickerdoodles, which I have never really liked.   I did like these, though, and have made them several times.


1 cup shortening

1 ½ cups sugar

2 eggs

2 ¾ cups Bob’s Red Mill All Purpose Flour

2 tsp cream of tartar

1 tsp baking soda

¾ tsp xanthan gum

¼ tsp salt

Mix together in separate bowl:

2 tsp cinnamon

2tbsp sugar

Preheat oven to 400.  Cream together shortening, sugar, and eggs.  Add dry ingredients, mixing well.  Shape into 1” balls, roll in cinnamon mixture.  Place 2” apart on baking sheet.  Bake for 8-10 minutes.  Let sit for 2 minutes before moving to cooling rack.  Store in airtight container.  Makes about 5 dozen.
