Holiday Breakfast Casserole – GF/DF Mm Mm Good! =)

This is a favorite holiday breakfast in our house.  We like it on Christmas and Easter mornings… and the 4th of July!

Holiday Breakfast Casserole

43-45 frozen tater tots, defrosted  OR diced cold baked potatoes

12-14 eggs, beaten and seasoned for scrambling (we use rice milk in place of cow milk in these)

1/2 lb. cooked ground sausage, bacon crumbles or ham chunks

1/2  cup grated cheese OR cheese substitute

Small amount maple syrup or salsa

Grease 9×13 pan.  Place defrosted tots on bottom, smash to form a layer OR dice cold baked potato into small chunks and spread evenly around the pan.  Sprinkle meat(s) evenly across the tots.  Crack eggs into large bowl, add milk and salt, pepper, and onion powder to taste.  Pour egg mixture over meat and tots.  Sprinkle with cheese.  Bake at 350 for 20-25 minutes, or until eggs are cooked and cheese is melted and bubbly.

For variation:  Layer a bit of diced onion and green pepper in with the meat.

Serve it with warm maple syrup or warm salsa.  Yum!
