GF/DF Chocolate Cake

HorseyBug has been counting down the days until her birthday for months!!!  She was anxious for some new presents and really wanted to be 11.  She requested Chocolate Cake for her cake.  She decorated the cake herself.  =)  Waterfalls, hills and horses…  Here is the chocolate cake recipe:

Homemade Chocolate Cake (aka Crazy Cake)

3 cups Bob’s Red Mill All Purpose Baking Flour

2 cups sugar

1/3 cup baking cocoa

2 tsp baking soda

1 ½ tsp xanthan gum

1 tsp salt

2 cups water

¾ cups vegetable oil

2 tsp vanilla extract

2 tsp vinegar

Mix all ingredients well.  Batter will be thin.  Pour into a greased cookie sheet pan and bake bake 20-25 minutes.  Cake is done when tester inserted into the middle comes out clean.

To make these round, I only put about an inch in the bottom of my round pans or about as high as it gets in the cookie sheet pan.  (I haven’t had any luck baking a cake thicker than that and having it turn out done).  I start at about 20 minutes and add time as needed.  The little amount that is left over from the rounds does really well as a mini-layer.  =)

The oil in this recipe may be substituted with applesauce.  It just makes it more chewy.
