Waffles… a most requested breakfast (or dinner, lol)

This is our favorite pre-lifestyle change recipe that I have adapted.  I use a homemade maple syrup that is not as thick as those made with HFCS at the store, so in this picture it is soaked in.  We like these with syrup and with homemade strawberry freezer jam.


2 ¼ cups Bob’s Red Mill All Purpose Flour Mix

¾ tsp salt

4 tsp baking powder

3 tbsp sugar

2 eggs

½ cup oil

1- 1¼ cups rice milk

Stir dry ingredients together.  Mix wet ingredients together, add all at once to dry ingredients, stirring just until flour is moistened.  Batter will have little lumps.  Bake in hot waffle iron.

Maple Syrup

2 cups sugar

1 cup water

1tsp Mapleine flavoring

Stir sugar and water together.  Heat to boiling (do not let it actually boil).  Remove from heat and add flavoring.  Serve warm.

Sometimes, on special occasions, we will have Cool Whip on them.  But it is pretty rare since we aren’t supposed to eat dairy.
