GF/DF Banana Chocolate Chip Muffins

This is another recipe I have adapted to our new lifestyle.  These muffins are a huge hit – I often buy extra bananas just so I can make these.  I did cut the sugar in half and like it better than the original.  (The recipe listed here already reflects the sugar change!)

Banana Choco Chip Muffins

½ cup sugar

3 medium bananas, sliced or mashed

¼ cup olive oil

2 eggs

1 tsp vanilla (gluten free)

3 tbsp rice milk

2 scant cups Bob’s Red Mill All-purpose baking flour

1 ½ tsp xanthan gum

1 tsp baking soda

1 tsp baking powder

½ cup gluten/dairy/soy free chocolate chips

Preheat oven to 350.  Beat sugar and bananas until smooth.  Add other ingredients as listed and mix well.  Pour into greased muffin tins.  Bake at 350 for 25 minutes or until tops are brown.  Makes 12 muffins or 36 mini-muffins.  Mini-muffins only bake for 10 minutes.  Delicious!!
