Friday Night is Pizza Night! GF/DF Pizza (Crust and Sauce)

Who doesn’t like pizza and movies on Friday to relax and celebrate the coming weekend??

I thought pizza was over for us until I found a crust mix from the store.  It was so expensive that I finally started playing with the ingredients until I found a great combination that we love!  Enjoy!!

Pizza Crust Mix

2 cups brown rice flour

½ cup tapioca flour

½ cup potato flour

1 ½ tsp Italian seasoning

¾ tsp xanthan gum

½ tsp salt

½ tsp garlic granules (or powder)

½ tsp onion powder

¼ tsp baking powder

¼ tsp cream of tartar

¼ tsp ascorbic acid

Blend all ingredients together and store in an airtight container.

For 2 – 12″  pizzas:                                        To make 2 large cookie sheet pizzas

1½  cups crust mix                                          3 cups (or whole batch) crust mix

1 ¼ cups water                                                  2 ½ cup water

1 tsp oil                                                                 2 tsp oil

Preheat oven to 450.  Mix crust in stand mixer and beat for 3minutes. Spread evenly over greased pizza pans .  Bake at 450 for 20 minutes. Remove from oven, top with sauce* and toppings.  Place back in oven, bake 10 more minutes.

If you want to make your own sauce, here are the instructions:

Pizza Sauce

1 (8 oz) can tomato sauce  ( or 1 ½ small cans per cookie sheet)

Salt

Italian seasoning

Garlic Powder

Onion Powder (minced fresh or dried works well too)

After cooking the crust for 20 minutes, pour sauce on pizza.  Smooth evenly.  Sprinkle salt, Italian seasoning, garlic powder and onion powder gently, evenly and smoothly across the sauce.  Place toppings on it and bake for 10 more minutes.

Helpful Hints:

  • It will stick to your pans occasionally, so we cut it up as soon as it comes out to prevent that.
  • We find that cutting it into bite size pieces with the pizza cutter works well.
  • After it cools a bit, you can hold it and bite it like “normal”pizza.  =)
